Ingredients

1/4 Cup(c)  chicken stock
1 Pound(lb)  potatoes, peeled and cut into 1 inch cubes
1/4 Teaspoon(t)  black pepper
1/2 Teaspoon(t)  salt
1   medium yellow onion, finely chopped
1 Tablespoon(T)  vegetable oil
1 Pound(lb)  boneless smoked pork butt, sliced 3/4 inch thick
1 Teaspoon(t)  caraway seeds
1 Pound(lb)  cabbage, coarsely shredded

Preparation

Mix the onion and oil in an ungreased shallow 3 quart microwave safe casserole.  Cover, and microwave on high until glassy, about 3 minutes.  Mix in the cabbage and caraway seeds, then arrange the potatoes around the edge of the casserole.  Pour in the stock, cover, and microwave on high for 12 minutes, stirring midway.  Scoop out half the cabbage.  Arrange the pork in a single layer over the cabbage in the casserole, then spread the scooped out cabbage on top.  Cover and microwave on high for 5 minutes.  Give the casserole a half turn, reduce the power to medium high, and microwave for another 5 minutes.  Remove from the oven and let stand, covered, for 5 minutes.  Sprinkle with the salt and pepper.
