Pork With Mixed Green Beans

Ingredients

2 Tablespoon(T)  vegetable or peanut oil
2   shallots, chopped
8 Ounce(oz)  pork fillet, sliced thinly
1   fresh galangal, 1 inch piece, sliced thinly
2 Clove(clv)  garlic, chopped
1 1/4 Cup(c)  chicken stock
4 Tablespoon(T)  chili sauce
4 Tablespoon(T)  crunchy peanut butter
4 Ounce(oz)  fine green beans
1 Cup(c)  frozen fava beans
4 Ounce(oz)  string beans, sliced

Preparation

Heat the oil in a wok and stir fry the shallots, pork, galangal and garlic until lightly browned. Add the chicken stock, chili sauce and peanut butter, and stir until the peanut butter has melted. Add all the beans and let simmer for 3 to 4 minutes. Serve hot with crispy noodles.
