Recipe Description
Porter cake, made with the black stout of Ireland, is now an established Irish cake, rich and moist with 'plenty of cutting'. Either Guinness, Murphy or Beamish can be used, depending on where your loyalties lie.

2   eggs
1 1/4 Cup(c)  porter or stout
1/3 Cup(c)  crystalized cherries
1/3 Cup(c)  candied peel, chopped
3 Cup(c)  golden raisins
16 Tablespoon(T)  butter
1/2 Teaspoon(t)  mixed spice
1/2 Teaspoon(t)  nutmeg, freshly ground
1 Pinch(pn)  salt
1 Cup(c)  superfine granulated sugar
1 Teaspoon(t)  baking powder
4 Cup(c)  plain white flour


Preheat the oven to 350° F. Line the bottom and sides of an 8 inch cake tin, 3 inches deep with parchment paper. Sieve the flour, salt and baking powder into a bowl. Add the sugar, freshly grated nutmeg and spice. Rub in the butter. Add the fruit, then mix the porter with the beaten eggs. Pour into the other ingredients and mix well. Turn into the lined pan and bake for about 2 1/2 hours. Cool in the pan, then store in an airtight container.
