Recipe Description
This versatile, rich potato soup can be served hot on a cold and blustery day, or chilled as a prelude to a special meal.

3 Cup(c)  leeks, including the light green tops, washed well and chopped
4 Cup(c)  all purpose potatoes, peeled and shredded
6 Cup(c)  reduced sodium, defatted chicken broth
1 Teaspoon(t)  kosher salt
1 Tablespoon(T)  fresh chives, minced
1 Tablespoon(T)  fresh parsley, chopped
1/2 Cup(c)  plain low fat yogurt


Simmer the leeks, potatoes, broth and salt in a pot for 30 minutes. Add the chives and parsley. Cook for 10 minutes more. Puree if a totally smooth soup is desired. Season to taste. Chill or serve immediately, stirring in the yogurt just prior to ladling out the soup.
