Recipe Description
These light pancakes originate from Russia, where they are served with caviar.  Here they are topped with an equally luxurious mixture of sour cream and smoked salmon.

4 119/2000 Gram(g)  floury (mealy) potatoes, boiled and mashed
3 Teaspoon(t)  rapid rise dried yeast
1/2 Cup(c)  oil, for frying
1 Pinch(pn)  ground black pepper, to taste
18 Teaspoon(t)  sour cream
6 Slice(sli)  smoked salmon
1 Pinch(pn)  salt, to taste
6 Slice(sli)  lemon, to garnish

Preparation

Place the mashed potatoes, dried yeast and flour in a large bowl and pour in 300ml lukewarm water.  Mix together well.  Leave to rise in a warm place for about 30 minutes, until the mixture has doubled in size. Heat a non-stick frying pan and add a little oil.  Drop spoonfuls of the mixture on to the preheated pan.  Cook the potato pancakes over a medium heat for about 2 minutes, until lightly golden on the underside, turn with a spatula and cook on the second side for about 1 minute.  Season the pancakes with some salt and pepper and transfer them to a warm platter.  Top with a little sour cream and a small slice of smoked salmon folded on top.  Garnish with a final grind of black pepper and slices of lemon.  Serve immediately.
