Recipe Description
This rice dish gets its name from its appearance after all the ingredients are added.  Since it requires chicken gizzard, liver and heart, it is usually served with poultry entrees.

Ingredients

2 Cup(c)  rice
1/4 Teaspoon(t)  thyme
2 Tablespoon(T)  parsley, minced
2   bay leaves
1/2 Teaspoon(t)  pepper
4 Cup(c)  chicken stock
2 Clove(clv)  garlic, minced
1   onion, chopped
1/2 Cup(c)  butter
3   chicken gizzard, liver and heart

Preparation

Chop the gizzard, liver, and heart from a chicken and saute in the butter with the chopped onion and garlic until lightly browned.  Add chicken stock, pepper, bay leaves, chopped parsley, and thyme and bring to a boil.  Add the rice and simmer for 20 minutes or until the rice is tender and the chicken stock is absorbed.  Adjust seasoning if necessary.

Additional notes

Chopped pecans can be added for additional flavor.
