Prosciutto And Mozzarella Parcels On Frisee Salad

Italian prosciutto crudo is a delicious raw smoked ham. Here it is baked with melting mozzarella ina light, crisp pastry case, making it an ideal finger food.

5 59/200 Gram(g)  frisee lettuce, to serve
1 153/200 Gram(g)  butter, melted
6   sheets filo pastry, each measuring 18 by 17 inches, thawed if frozen
6   prosciutto crudo slices
2 Dash(ds)  hot chilli sauce
7 3/50 Gram(g)  mozzarella cheese, cut into 6 slices

Preparation

Preheat the oven to 400° FI. Sprinkle a little of the chilli sauce over each slice of prosciutto crudo. Place a slice of mozzarella on each slice of prosciutto, then fold it around the cheese. The cheese should be enclosed by the ham. Brush a sheet of filo pastry with melted butter and fold it in half to give a double thick piece measuring 9 by 5 inches. Place a ham and mozzarella parcel in the middle of the pastry and brush the remaining pastry with a little butter, then fold it over to enclose the prosciutto and mozzarella in a neat parcel. Place on a baking sheet with the edges of the pastry underneath and brush with a little butter. Repeat with the remaining parcels and sheets. Bake the filo parcels for 15 minutes, or until the pastry is crisp and evenly golden. Arrange the salad on six plates and add the parcels. Serve immediately.
