Recipe Description
Homemade puff pastry takes a little time to make, but it is more than worth the effort. The flavor of it bears no relation to the commercial equivalent. It is essential to use butter.

2 Cup(c)  butter, firm but pliable
1 Dash(ds)  lemon juice
1 1/2 Cup(c)  cold water
1 Pinch(pn)  salt
1 Pound(lb)  strong flour, chilled

Preparation

Sieve the flour and salt into a bowl and mix to a firm dough with water and a squeeze of lemon juice. Cover with wax paper or plastic wrap and rest for 30 minutes in the refrigerator. Roll the chilled dough into a square about 1/2 inch thick. Unwrap the butter and shape into a slab roughly about 1/4 inch thick. Place this in the center of the dough and fold the dough over the edges of the butter to make a neat parcel. Make sure your chilled marble slab or pastry board is well floured, then flatten the dough with a rolling pin, and roll it out into a rectangle about 18 inches long and 6 1/2 inches wide. Fold neatly into three, with the sides as accurately aligned as possible. Seal the edges with a rolling pin. Give the dough a one quarter turn (90°). It should now be on your pastry bench as though it was a book with the open ends facing north/south. Roll out again, fold in three and seal the edges with the rolling pin. Cover with plastic wrap or wax paper and rest in the fridge for 30 minutes. The pastry has now had two rolls or 'turns'. Repeat the rolling process another two times, giving the dough six rolls altogether, with a 30 minute rest in the fridge between every two turns. Chill for at least 30 minutes before using.
