Recipe Description
This is traditional rice dish of Bene-Israel, Jews of India.  An exciting blend of exotic spices and delicate Indian basmati rice.

8 Teaspoon(t)  cardamom seed powder
12   peppercorns
12   cloves
5   small cinnamon sticks
10   onions
2 Tablespoon(T)  transparent seedless raisins
2 Tablespoon(T)  pistachios
2 Tablespoon(T)  almonds
3 Tablespoon(T)  ghee
2 Pound(lb)  basmati rice


Wash rice and set aside for water to drain off.  Heat ghee in a soup pot.  Fry almonds, pistachios and raisins.  Set aside in a bowl.  Fry onions to golden brown.  Set aside in another bowl.  To ghee, add cinnamon, cloves, peppercorns, bay leaves and cardamon.  Fry 30 seconds.  Add rice.  Stir continuously until well fried.  Add enough water to cover about 2 1/2 inches over the rice.  Cook over a medium heat until very little water is left.  Sprinkle cardamom seed powder over rice, cover with lid, tum heat to low.  Stir after 5 minutes so rice does not stick to bottom.  Add almonds, pistachios and raisins.  Cook a few minutes longer.  Put fried onions on top of rice.
