1/2 Cup(c)  all purpose flour
1/2 Cup(c)  bran
1 Teaspoon(t)  sugar
2 Teaspoon(t)  low sodium baking powder
1/2 Teaspoon(t)  cinnamon
2 Tablespoon(T)  canola oil
1/2 Cup(c)  cooked pumpkin
2   egg whites
3/4 Cup(c)  unsweetened orange juice
1/2 Cup(c)  apple, chopped
1 Cup(c)  wheat germ
1/2 Cup(c)  all purpose flour
4 Tablespoon(T)  low fat margarine, melted

Preparation

Preheat oven to 350° F. Combine 1 cup of flour, bran, sugar, baking powder and cinnamon in a large bowl. Add the oil, pumpkin, egg whites, orange juice and apple, stirring until just blended. Spoon into prepared muffin tins. Combine the wheat germ, 1/2 cup of flour and the margarine in a bowl until the mixture resembles coarse crumbs. Sprinkle over the muffins. Bake for 15 to 20 minutes.
