2 1/2 Cup(c)  all purpose unbleached flour
2 1/2 Teaspoon(t)  baking powder
1 Teaspoon(t)  cinnamon, ground
1/2 Teaspoon(t)  nutmeg, ground
1/2 Teaspoon(t)  salt
1/4 Cup(c)  brown sugar
1/4 Cup(c)  margarine, softened
16 Ounce(oz)  pumpkin puree
1 Cup(c)  soy milk
1/3 Cup(c)  dark raisins


Preheat the oven to 400 degrees F. Lightly grease 2 baking pans. In a medium mixing bowl, combine the flour, baking powder, cinnamon, nutmeg, salt and sugar. Cut in the margarine until the dough resembles coarse meal. With a large mixing spoon, blend in the pumpkin and milk. Mix until fully incorporated. Fold in the raisins. Drop or scoop 2 to 3 tablespoons of batter at a time onto the baking sheets, forming round balls. Scoop all of the batter onto the pans. Place in the oven and bake until the crust of the scones are lightly browned, 12 to 14 minutes. Let the scones cool to room temperature. Serve with a hot beverage.
