This colorful dish makes a lovely meal when paired with a green salad or green vegetable.

1 Tablespoon(T)  olive oil
1 Tablespoon(T)  butter
1 Tablespoon(T)  fresh sage
1 Clove(clv)  garlic, minced
1/4 Cup(c)  onion, chopped
1 Cup(c)  arborio rice
1 Cup(c)  pumpkin
3 Cup(c)  vegetable broth


Preheat oven to 350° F. In a small skillet, heat olive oil and butter over medium high heat. When oil mixture is sizzling, add sage and minced garlic. Saute for 1 minute. Transfer herb mixture to a 3 quart casserole dish. Add remaining ingredients and cover. Bake 1 hour. Stir before serving.
