Ingredients

1/2 Teaspoon(t)  arrowroot or cornstarch
1 Cup(c)  nuts or unsweetened coconut, chopped
2 Tablespoon(T)  arrowroot or cornstarch
1/2 Teaspoon(t)  cinnamon
1/3 Cup(c)  unsweetened apple juice concentrate (any brand)
4 Cup(c)  apples or pears, peeled, cored and sliced

Preparation

Puree fruit and concentrate in a blender. In a medium sized saucepan, combine fruit mixture and cinnamon. Place saucepan over medium heat and bring mixture to a boil. Partially cover to allow steam to escape, reduce heat, and simmer for 10 minutes, stirring occasionally. Be careful to avoid splatters. Remove pan from heat and let mixture cool. When mixture is cool, add arrowroot (or cornstarch), place saucepan over medium heat, and stir constantly. Arrowroot will thicken the mixture before it reaches the boiling point. Cornstarch will thicken it 1 to 2 minutes after it reaches the boiling point. When mixture reaches desired pudding consistency, remove pan from heat and let cool for 15 minutes. Stir mixture, pour into serving bowls, cover, and refrigerate until ready to serve. Serve plain or topped with chopped nuts or moistened unsweetened coconut, if desired.
