Recipe Description
Red snapper, grouper and mahi-mahi are other good choices for this basic broiled fish. I serve it with mashed potatoes with olives and parsley and broccoli with oil and lemon.

1   lemon, cut into wedges
2 Tablespoon(T)  chopped fresh flat leaf parsley
1 Dash(ds)  salt and freshly ground black pepper
1 Teaspoon(t)  dried oregano, crumbled
2 Clove(clv)  garlic cloves, thinly sliced
2 Tablespoon(T)  red wine vinegar
3 Tablespoon(T)  olive oil
1 1/2 Pound(lb)  fresh cod fillets


Preheat the broiler to high. Oil a baking pan large enough to hold fish in a single layer. Place fish in the pan. Stir together oil, vinegar, garlic, oregano, and salt and pepper to taste. Pour mixture over the fish fillets. Sprinkle with half the parsley. Broil fish 8 to 10 minutes, depending on thickness, or until just barely opaque when cut in the thickest part. Sprinkle with remaining parsley. Serve hot and garnished with lemon wedges.
