Recipe Description
Make this delightful soup when fresh crab is in season. Serve for a luncheon or romantic dinner with a fresh fruit salad.

Ingredients

2 Tablespoon(T)  butter
2 Tablespoon(T)  yellow onion, minced
10 1/2 Tablespoon(T)  all purpose flour
2 Cup(c)  chicken stock or broth
1/4 Cup(c)  tomato paste
2 Cup(c)  half and half
1/2 Teaspoon(t)  salt
1 Dash(ds)  white pepper
2 Tablespoon(T)  dry white wine (optional)
3/4 Pound(lb)  crab meat, flaked and picked over
1 Tablespoon(T)  parsley, chopped

Preparation

In a soup pot over medium heat, melt butter. Add onion and saute until tender, about 5 minutes. Add flour and stir until bubbly. Gradually add chicken stock and tomato paste. Whisk until smooth. Add half and half, salt, pepper, wine (if using) and crab. Bring to a boil, then reduce heat to low. Simmer, uncovered, 5 minutes. Serve hot with a sprinkle of parsley on top.
