Recipe Description
Short on time? Doctor up a purchased cranberry bread mix with nuts and grated orange peel. To keep the loaf tender, don't over mix the batter.

15 1/2 Ounce(oz)  cranberry quick bread mix
1/2 Cup(c)  nuts, chopped
1 Tablespoon(T)  orange peel, grated
1/2 Cup(c)  orange juice
1/2 Cup(c)  water
2 Tablespoon(T)  oil
1   egg


Heat oven to 350 degrees F. Grease and flour bottom only of 8 by 4 or 9 by 5 inch loaf pan. In large bowl, combine all ingredients. Stir 50 to 75 strokes with spoon until mix is moistened. Pour batter into greased and floured pan. Bake at 350 degrees F for 55 to 65 minutes, or until toothpick inserted in center comes out clean. Cool 15 minutes, then emove from pan. Cool 1 hour, or until completely cooled. Wrap tightly and store in refrigerator.
