Ralph's Rich Raisin Chocolate Cake

The raisin soaked in orange juice make this chocolate cake unique. Almost like a liqueur infused cake, but with the benefit of orange plumped raisins dancing on your palate.

3 1/2 Ounce(oz)  raisins
1   orange zested
6 Ounce(oz)  butter, diced, plus extra for greasing the pan
3 1/2 Ounce(oz)  semisweet chocolate
4   large eggs. beaten
3 1/2 Ounce(oz)  super fine sugar
1 Tablespoon(T)  vanilla extract
2 Ounce(oz)  all purpose flour
2 Ounce(oz)  almonds, ground
1/2 Teaspoon(t)  baking powder
1 Pinch(pn)  salt
2 Ounce(oz)  blanched almonds, toasted and chopped
1/4 Cup(c)  confections sugar, sifted, to decorate
1   orange juiced


Put the raisins in a small bowl, add orange juice, and let soak for 20 minutes. Line a deep 10 inch round cake pan with a removable bottom, with waxed paper and grease the paper. Set aside. Melt the butter and chocolate together in a small pan over medium heat, stirring. Remove from the heat and set aside to cool. Using an electric mixer beat the eggs, sugar, and vanilla together for about 3 minutes until light and fluffy. Stir in the cooled chocolate mixture. Drain the raisins if they haven't absorbed all the orange juice. Sift over the flour, ground almonds, baking powder, and salt. Add the raisins, orange rind, and almonds, and fold everything together. Spoon into the cake pan and smooth the surface. Bake in a preheated oven, 350°F, for about 40 minutes, or until a toothpick inserted into the center comes out clean, and the cake starts to come away from the side of the pan. Let cool in the pan for 10 minutes, then remove from the pan and let cool completely on a wire rack. Dust with confectioners' sugar before serving.
