Recipe Description
I got this recipe at a friend's birthday bash that was held at L'Academie de Cuisine in Bethesda Maryland. The finest shreds of fresh ginger are quickly fried and then perched atop baby salad greens, crowned with sweet raspberries.

Ingredients

6 Cup(c)  mesclun greens, rinsed and dried
1 Cup(c)  fresh raspberries
1 Pinch(pn)  kosher salt, to taste
1/2 Cup(c)  canola oil
1/2 Cup(c)  fresh or frozen raspberries
2 Tablespoon(T)  hoisin sauce
1/4 Cup(c)  raspberry vinegar
2 Tablespoon(T)  fresh herbs, such as basil, tarragon, thyme, or mint, chopped
1 Pinch(pn)  black pepper, to taste
1 Pinch(pn)  kosher salt, to taste
1 Cup(c)  oil for deep frying
1/4 Cup(c)  fresh ginger, cut into thin julienne strips

Preparation

To prepare the ginger crisps: Pour oil to a depth of about 2 inches in a small saucepan and heat it to 350° F (the oil will shimmer when it is hot enough). In small batches, drop the ginger juliennes into the hot oil and fry until golden brown, about 1 minute. Drain, and season lightly with salt. Serve the ginger crisps within 1 hour of making them. To prepare the raspberry vinaigrette: Combine the vinegar, hoisin sauce and raspberries in a mixer bowl, and blend with an electric mixer on medium speed. With the mixer running, add the oil in a thin stream. Strain the dressing through a fine mesh strainer into another bowl or jar. Add salt and pepper, and stir in the fresh herbs. When you are ready to serve the salad, toss the greens with enough of the dressing to lightly coat. Garnish with the raspberries and fried ginger crisps. Serve any extra dressing in a boat or bowl on the side.
