If shallots are unavailable, use minced red onion in this potent and colorful salad.

Serves To:USMetric
1/2 Teaspoon(t)  kosher salt
2 Tablespoon(T)  extra virgin olive oil
1/2 Cup(c)  red wine vinegar
1 Clove(clv)  garlic, peeled and crushed
4   medium tomatoes, cut into wedges
1/2 Cup(c)  red onions, thinly sliced
1 1/2 Tablespoon(T)  fresh basil, minced
1 Tablespoon(T)  fresh parsley, minced
1   shallot, minced


Toss together the shallots, parsley, basil, onions, tomatoes and garlic. Whisk together the vinegar, oil and salt. Pour over the salad and toss. Let rest for at least 4 hours before serving. Remove the garlic before serving.
