Ingredients

2   red bell peppers, halved and seeded
2   garlic cloves
1 Tablespoon(T)  olive oil
1 Tablespoon(T)  lemon juice
1/2 Cup(c)  fresh white breadcrumbs
1   salt and pepper

Preparation

Place the bell pepper halves and garlic in a pan and add just enough water to cover. Bring to a boil, then reduce the heat, cover, and simmer gently for 10-15
minutes until soft and tender. Drain and set aside to cool.

Coarsely chop the bell pepper halves and garlic and place in a food processor with the olive oil and lemon juice. Process to a smooth paste.

Add the breadcrumbs and process briefly until just combined. Season with salt and pepper to taste. Transfer to a serving bowl, cover with plastic wrap, and chill in the refrigerator until required.
