Radishes. while not indigenous to Mexico, fit right into the country's cuisine, just as this lively mixture of chopped radishes and cilantro adds a crunch and color to a number of dishes. Spoon this crisp relish over the top of soft fish tacos, or with roast pork and chicken entrees.

1/4 Cup(c)  cilantro leaves,chopped
16   large radishes
1 Pinch(pn)  sea salt, to taste
4   limes, juiced


Cut off both ends of the radishes and slice lengthwise into 1/4 inch slivers. Mix the cilantro and radishes together in a glass bowl, sprinkle well with salt, and toss with the lime juice. Cover and chill in the refrigerator for about 45 minutes.
