Recipe Description
The peas are added frozen, during the last ten minutes.  This gives them time to warm through and cook lightly, but not so long that they shrivel, or turn dull.

1/2 Teaspoon(t)  kosher salt
1/4 Teaspoon(t)  pepper, freshly ground
2 Tablespoon(T)  fresh mint leaves, minced
1 Cup(c)  frozen peas
1 Cup(c)  long grain white rice
2 Cup(c)  water

Preparation

Bring the water to a boil.  Stir in the rice, cover, and cook 20 minutes, until all the water has been absorbed.  Add the remaining ingredients and fluff the rice with a fork.  Cover and let sit 10 minutes before serving.
