Rich And Thick Tofu Chocolate Mousse

The tofu base in this chocolate mousse recipe is the secret behind the rich, thick texture. Add the flavors of avocado, agave nectar, coconut and chocolate, and you have an out of this world mousse experience!

Ingredients

2 Cup(c)  non dairy semisweet chocolate chips, or bittersweet chocolate, chopped, melted and cooled
2 Tablespoon(T)  instant coconut milk powder (optional)
1 Teaspoon(t)  pure vanilla extract
1/4 Cup(c)  agave nectar
1   ripe avacado, halved, pitted, and peeled
1 Pound(lb)  firm silken tofu, cut into cubes

Preparation

Place the tofu in a food processor and blend until smooth. Add the avocado, agave, vanilla, coconut milk powder, if using, and melted chocolate. Blend until perfectly smooth, scraping the sides occasionally. Divide among 6 small sized dessert dishes. Chill for at least 2 hours or overnight before serving.
