Rich, cream, calms and potatoes make up this spectacular chowder.

1/2 Cup(c)  heavy cream
1   salt and pepper
2   medium baked potatoes, peeled and diced
1 Pinch(pn)  parsley flakes
10 Ounce(oz)  can clams, drained
1 Tablespoon(T)  onion flakes
2   ribs celery, finely chopped
2/3 Cup(c)  all-purpose flour
1 Cup(c)  nonfat dry milk
1 3/4 Cup(c)  chicken broth
4 Cup(c)  clam juice


In a blender, combine the clam juice, broth, dry milk, and flour.

Pour into a 2 1/2 -quart saucepan and simmer, stirring constantly, over medium-high heat until the mixture is thick and smooth.

Reduce the heat to low; stir in the celery, onion flakes, clams, parsley flakes, and potatoes.

Simmer for 15 to 20 minutes, until the potatoes are tender, then season with salt and pepper to taste. Add the cream and stir into the soup.

Additional notes

Leftover baked or steamed potatoes work well in this recipe.
