Recipe Description
You won't believe this eggnog is nearly fat free. We tested it with fat free frozen vanilla yogurt, but it would also work with ice milk. Each shake provides about half the calcium a woman needs in an entire day, and more than half of the calcium a man needs.

Ingredients

5 1/2 Cup(c)  water
1 2/3 Cup(c)  non fat dry milk powder
1/2 Cup(c)  sugar
1   4 inch piece vanilla bean, split lengthwise
1/2 Cup(c)  egg substitute
1/2 Teaspoon(t)  nutmeg, freshly grated
2 Cup(c)  fat free frozen vanilla yogurt, softened

Preparation

Stir together water, milk powder and sugar until smooth in a large saucepan. Add vanilla bean. Bring to a boil over medium heat, stirring constantly until sugar melts. Gradually stir about one fourth of the hot mixture into egg substitute. Add to remaining hot mixture, stirring constantly. Stir in 1/2 teaspoon nutmeg. Cook over low heat, stirring constantly, until thickened. Remove from heat and let cool. Cover and chill thoroughly. Just before serving, remove and discard vanilla bean. Stir in frozen yogurt. Sprinkle each serving with nutmeg or add a cinnamon stick, if desired.
