Recipe Description
This risotto is fresh and delicious, reminiscent of Hawaii! Serve it with a green salad and some sherbet for dessert.

2 Cup(c)  water
2 Cup(c)  chicken broth
1 Tablespoon(T)  vegetable oil
1 Tablespoon(T)  butter
1   onion, chopped
3 Clove(clv)  garlic, minced
1/2 Teaspoon(t)  thyme leaves, dried
1   green bell pepper, chopped
1 1/2 Cup(c)  long grain white rice
1 Cup(c)  cooked ham, chopped
8 Ounce(oz)  pineapple tidbits, drained
1/8 Teaspoon(t)  pepper
1/4 Cup(c)  parmesan cheese, grated


In medium saucepan, combine water and chicken broth and bring to a simmer over low heat. Keep warm. In large saucepan, heat oil and butter over medium heat. Add onion and garlic. Cook and stir for 3 minutes. Add thyme, bell pepper and rice. Cook and stir for 4 minutes. Start adding the broth, 1 cup at a time, stirring frequently. When 1 cup broth remains to be added, add ham, pineapple and pepper to risotto. Add last cup of broth. Cook and stir until rice is tender and creamy and liquid is absorbed. Stir in Parmesan, cover, let stand for 5 minutes, then serve.
