Recipe Description
My dad's wife made this apple cake for us and it was an immediate crowd pleaser. Rich and moist, this cake can be served plain, topped with a light glaze or frosting, or a simple dusting of powdered sugar.

2 Teaspoon(t)  baking soda
3 Teaspoon(t)  salt
1 Cup(c)  walnuts, chopped
4 Cup(c)  apples, diced
2   eggs
2 Cup(c)  sugar
1 Teaspoon(t)  vanilla
1/2 Cup(c)  oil
2 Cup(c)  flour


Preheat oven to 350 degrees F. Beat together eggs sugar and vanilla. Beat in oil until smooth. Sift together flour, baking soda, cinnamon and salt. Incorpate egg mixture. Add reamining nuts and apple until mixed throughly into cake batter. Pour into 13 by 9 inch greased and floured cake pan and bake for 35 to 40 minutes. Allow cake to cool before frosting.
