Roasted garlic adds a smooth touch to this peppy tomato salsa.

1   french baguette, sliced 3/8 to 1/2 inch thick
1 Teaspoon(t)  tabasco sauce
1 Tablespoon(T)  extra virgin olive oil
2 Tablespoon(T)  lemon juice
2 Tablespoon(T)  fresh cilantro, chopped
1/3 Cup(c)  red onion, diced
1/2 Cup(c)  carrot, shredded
1/2 Cup(c)  zucchini, diced
1/2 Cup(c)  green bell pepper, diced
2 Cup(c)  tomatoes, diced
1   bulb garlic


Heat oven to 350° F. Remove papery outer skin from garlic bulb, leaving bulb intact. Place garlic in a small ovenproof custard dish, cover and bake for 35 to 40 minutes, or until soft enough for a knife to be easily inserted. Let cool. Remove garlic pulp from casings and chop. In a bowl, combine chopped garlic, tomatoes, pepper, zucchini, carrot, red onion, cilantro, lemon juice, olive oil and hot pepper sauce. Cover and chill for at least 30 minutes to blend flavors. Toast bread and top with salsa.
