Potato pancakes are a traditional side dish that make a great everyday snack, or complement almost any holiday meal.

1/3 Cup(c)  bacon drippings
1 Pinch(pn)  salt, to taste
3 Tablespoon(T)  flour
1   egg
1   large onion, cut up and grated (in a blender)
8   large potatoes, peeled, cut up and grated (in a blender)


Combine the potatoes with the onions, egg, and flour.  Season with salt.  Heat the bacon drippings in a large skillet.  Drop batter by spoonfuls into fat.  Flatten with a fork.  Fry 3 pancakes at one time, on high heat on both sides until golden.
