Recipe Description
Substituting Grand Marnier for rum makes this cake absolutely wonderful, but the original rum is pretty nice, too. When substituting distilled liqueurs, be watchful for suspect ingredients, such as caramel coloring.

1 Teaspoon(t)  baking soda
2 Teaspoon(t)  baking powder
2 Teaspoon(t)  cider vinegar
3 Tablespoon(T)  rum
5 Tablespoon(T)  milk
1/2 Teaspoon(t)  salt
1 1/4 Teaspoon(t)  xanthan gum
1 Cup(c)  potato starch
3   eggs
1/4 Pound(lb)  butter
3/4 Cup(c)  sugar


Preheat the oven to 350°F. Grease a large loaf pan. In a large bowl, cream together the sugar and butter. Add the eggs. Mix until light, thick, and fluffy. Add the remaining ingredients. Beat until thick and creamy (I like to use a whisk blade on my mixer, thereby incorporating as much air as possible.) Scrape down the edges once during the mixing process. Pour the batter into the prepared pan. Bake for 45 to 50 minutes, until a toothpick inserted in the middle tests cleanly.
