Recipe Description
En saladilla Rusa is a popular tapa in Spain, probably brought in by the many Frenchmen living in Spain about the time of the Napoleonic wars. The basic salad always has potatoes, carrots and peas. Beets, beans, cauliflower and other cooked vegetables can be added.

Ingredients

2 Tablespoon(T)  black olives or roasted red pepper strips, for garnish
2 Tablespoon(T)  fresh parsley, chopped, for garnish
1 Tablespoon(T)  lemon juice
1 Tablespoon(T)  dijon mustard
2 Tablespoon(T)  sour cream
1/4 Cup(c)  mayonnaise
1 Pinch(pn)  salt, to taste
6   green onions, white part only, finely chopped
1 Cup(c)  cooked green beans, cut into 1/2 inch pieces
1 Cup(c)  cooked turnip or celery root, cut into 1/2 inch dice
1 Cup(c)  frozen green peas, defrosted and cooked for 2 minutes
1 Cup(c)  cooked carrots, cut into 1/2 inch dice
1 Cup(c)  cooked potatoes, cut into 1/2 inch dice
1 Pinch(pn)  pepper, freshly ground, to taste

Preparation

In a large bowl, combine cooked vegetables with green onions. Season with salt and pepper. In a small bowl, combine mayonnaise, sour cream, mustard and lemon juice. Pour dressing over vegetables and toss until well coated. Cover and refrigerate until ready to serve. Spoon salad into a serving bowl or platter and sprinkle with parsley. Garnish with black olives or roasted red pepper strips.
