Recipe Description
I saw the base recipe for sweet potato latkes in the newspaper and decided to make it, but added my own spin to create a fun and unusual Hanukkah Latke.

Ingredients

3/4 Cup(c)  ginger snap crumbs
1/4 Teaspoon(t)  pumpkin pie spice
1/2 Teaspoon(t)  pepper
1 Teaspoon(t)  salt
1 Teaspoon(t)  fresh ginger root, grated
4   eggs
1/4 Cup(c)  flour
2 Pound(lb)  sweet potatoes, peeled and coarsely grated

Preparation

Preheat oven to 450 degrees F.  Grate sweet potatoes into a mixing bowl.  Add flour and eggs, and blend.  Add ginger, salt, pepper and pumpkin pie spice.  Spray a pizza pan with non stick cooking spray.  Sprinkle ginger snap crumbs all around pan.  Spread batter on top.  Bake in 450 degree F oven 45 minutes.  Cut into wedges.
