Recipe Description
The use of fresh vegetables add flavor and color to this easy shrimp dish.  Serve with long grain rice, if desired.

5 1/2 Pound(lb)  shrimp, peeled and deveined
2 Tablespoon(T)  garlic, minced
1 Tablespoon(T)  lime juice
1 Teaspoon(t)  thyme, ground
1 Teaspoon(t)  salt free seasoning
1/2 Teaspoon(t)  white pepper
1   large tomato, cut in 8 pieces
2 Cup(c)  fresh corn kernels
2 Cup(c)  green bell pepper, chopped
1 Cup(c)  red bell pepper, chopped
1/2 Cup(c)  onion, chopped


Drain shrimp of excess water.  In large mixing bowl combine shrimp, garlic, lime juice, thyme, salt free seasoning and white pepper, and mix well.  Lightly coat a large skillet with cooking spray and cook shrimp on medium high for 6 to 8 minutes, stirring occasionally.  Remove shrimp from skillet.  In same skillet combine corn, bell peppers and onion.  Cook on medium until corn is tender.  Add shrimp and tomatoes to skillet and cook on until shrimp are opaque in the center.
