Recipe Description
These fun and festive sweet potato balls are wonderful to share at parties and during winter holidays.  They can be rolled in powdered sugar, or shredded coconut, depending upon preference.

Ingredients

2 Pound(lb)  sweet potatoes
6 Tablespoon(T)  sugar
1/2 Cup(c)  flour
1/4 Teaspoon(t)  salt
1   egg
2 Cup(c)  oil, for frying
1/2 Cup(c)  powdered sugar

Preparation

Cook sweet potatoes in boiling water until soft.  Mash well, removing any stringy fibers.  Mix with sugar, flour, salt and egg.  With hands, roll about a tablespoon of mixture and form into small balls.  Heat oil and deep fry over medium heat until slightly browned.  Drain, and roll in powdered sugar.
