Recipe Description
For a lip puckering tart salad, rinse sauerkraut only once, briefly. For a more neutral tasting flavor, rinse three or more times.

Ingredients

1 Tablespoon(T)  lemon juice
1 Pound(lb)  sauerkraut, rinsed and drained
2   medium carrot, peeled and grated
1   medium onion, finely chopped
2 Tablespoon(T)  sunflower oil
1/2 Teaspoon(t)  sugar
1 Pinch(pn)  black pepper, freshly ground, to taste
1   large apple

Preparation

Peel, core and shred apple into a large bowl. Drizzle lemon juice over shredded apple and stir. Add sauerkraut, carrots, onion, sunflower oil and sugar. Gently mix and season with pepper to taste. Cover and refrigerate 1 hour to overnight before serving.
