A warm up soup that is just right for a stormy winter night. Serve with homemade breadsticks and a wedge of iceberg lettuce with blue cheese dressing.

Ingredients

1/2 Pound(lb)  bulk pork sausage
1 Teaspoon(t)  vegetable oil, if needed
1   yellow onion, chopped
1/2   green bell pepper, seeded and chopped
2 Cup(c)  chicken stock or broth
2 Cup(c)  beef broth
15 Ounce(oz)  kidney beans, drained and rinsed
14 1/2 Ounce(oz)  tomatoes, with juice, diced
1   medium russet potato, peeled and chopped
1/4 Teaspoon(t)  chili powder
1/4 Teaspoon(t)  thyme, dried
1 Teaspoon(t)  salt
1 Pinch(pn)  pepper, freshly ground, to taste
1   bay leaf

Preparation

In a large soup pot over medium heat, brown sausage. Add oil if needed to keep meat from sticking. Break up sausage with a spoon as it cooks. Add onion and bell pepper and saute until meat is no longer pink and vegetables are tender, about 5 minutes. Add remaining ingredients. Reduce heat to low and simmer, covered, until flavors are blended, about 45 minutes. Remove bay leaf and discard.
