Recipe Description
If you think the only way of preparing scalloped potatoes is by baking them in the oven, think again! This dish combines all the ingredients of a solid, southern breakfast into one skillet, including scallop sliced potatoes. Everything is simmered together in a creamy, white sauce.

Ingredients

1/8 Teaspoon(t)  pepper
1/4 Cup(c)  all purpose flour
3 Cup(c)  skim milk
1/3 Cup(c)  water
1/2 Cup(c)  onion, chopped
1 Cup(c)  carrots, thinly sliced
1 Cup(c)  celery, thinly sliced
1 1/2 Cup(c)  small new red potatoes, thinly sliced
2 Cup(c)  cooked ham, cubed

Preparation

Spray large nonstick skillet with nonstick cooking spray. Heat over medium heat until hot. Add ham, potatoes, celery, carrot, onion and water. Cook until bubbly. Reduce heat to medium low. Cover and cook 5 to 8 minutes, or until vegetables are tender, stirring once. Meanwhile, in medium bowl, combine milk, flour and pepper. Blend well. Add to skillet. Cook and stir over medium heat until bubbly and thickened.
