Recipe Description
This mild flavored rye bread is not the deli-type rye you may be accustomed to. Scandinavians love this recipe for their open face sandwiches. While the recipe is traditionally made by hand, I prefer to replicate their bread in a bread machine. Serve hot, warm, or at room temperature. Store in ziplock bag or freeze.

1 Cup(c)  non fat milk
2 Tablespoon(T)  extra virgin olive oil
2 Tablespoon(T)  light molasses
1 Tablespoon(T)  cider vinegar
2 1/2 Cup(c)  unbleached bread flour
1/4 Teaspoon(t)  ascorbic acid
1 Tablespoon(T)  vital wheat gluten
1/2 Teaspoon(t)  aniseed
3/4 Cup(c)  medium rye flour
1/2 Teaspoon(t)  fennel seed
1/4 Cup(c)  dates, chopped and pitted
1 Teaspoon(t)  orange zest, freshly grated
2 Tablespoon(T)  potato flour
2 1/2 Teaspoon(t)  bread machine yeast


Place all ingredients into your bread machine pan in the order listed or in the order your manufacturer suggests. Include the dates. They are not added later as is true with most fruits and nuts in bread machine recipes. Set the machine for white bread, 2 pound loaf, light crust.
