Shrimp And Pineapple Salad With Mauna Lau Dressing

Canned pineapple tidbits can be used in place of fresh. If you go this route, be sure to reserve the juices in the dressing.

1 Pound(lb)  small shrimp, cooked
1   pineapple, peeled and cored
5 Ounce(oz)  water chestnuts, drained, rinsed and sliced
1   head boston or bibb lettuce
1 Pinch(pn)  pepper, to taste
1 Tablespoon(T)  sesame seeds, toasted
1/2 Cup(c)  cider vinegar
1/4 Cup(c)  pineapple juice
3/4 Teaspoon(t)  salt
1 Tablespoon(T)  sugar
1/2 Cup(c)  salad oil
1/2 Cup(c)  sesame oil
1 Teaspoon(t)  lemon juice


Cut pineapple fruit into small tidbits. Combine with shrimp and water chestnuts. Line a salad bowl with lettuce leaves and arrange salad mixture on them. When ready to serve, pour dressing over the salad and garnish with toasted sesame seeds. Combine all ingredients in a jar and shake well.
