Shrimp With Feta And Olives

A truly unique shrimp recipe that is very good, and never leaves leftovers. Try serving it with crusty bread and boiled rice.

1 1/2 Pound(lb)  shrimp, peeled and deveined
2 Tablespoon(T)  olive oil
2 Clove(clv)  garlic, crushed
2 Slice(sli)  dried chilies
13 Ounce(oz)  tomatoes, crushed
1/4 Tablespoon(T)  black pepper, cracked
2 Tablespoon(T)  fresh lemon thyme leaves
2 Ounce(oz)  feta cheese, chopped
12   black olives
1 Pinch(pn)  salt, to taste


Peel shrimp leaving tails intact and devein. Heat oil in a large shallow pan. Add the garlic and chilies. Stir over low heat for 1 minute. Add the tomatoes and pepper. Bring to boil, then reduce heat and simmer, uncovered, for 15 minutes, stirring occasionally. Add shrimp and thyme. Stir over low heat 4 minutes. Add cheese and olives. Stir until just heated through. Add salt to taste. Remove chilies and discard.

I made this the other day for my sister and I and it came out great. Both of us didn't talk during the meal, we just ate till it was all gone.
