The lemon in this pasta enhances the flavors of the asparagus and the shrimp and makes this a light, refreshing dish.

7 Ounce(oz)  peeled shrimp, cooked
2 Tablespoon(T)  fresh chives, snipped
1   large lemon, zest and juice
3 Tablespoon(T)  parmesan cheese, freshly grated
4 Tablespoon(T)  olive oil
1/4 Pound(lb)  asparagus tips
1 1/3 Cup(c)  penne pasta


Cook the pasta according to the package instructions.  About 4 to 5 minutes before it has finished cooking, add the asparagus and continue to cook until the asparagus is tender.  Drain well and return to the pan.  Meanwhile, whisk together the olive oil, Parmesan cheese, lemon zest and juice and chives.  Stir in the lemon dressing and shrimp.  Cook, stirring continuously, for 4 to 5 minutes, or until the shrimp are hot.
