Recipe Description
This simple recipe is my adaptation of one I sampled while in Italy. An excellent way to prepare sole.

2 Tablespoon(T)  unsalted butter, melted
1 Tablespoon(T)  fresh lemon juice
1/4 Cup(c)  almonds or pine nuts, sliced
4   large sole (1 1/2 pounds)
1 Pinch(pn)  salt, to taste
6   fresh basil leaves, finely chopped
1 Pinch(pn)  black pepper, freshly ground, to taste


Place a rack in the center of the oven. Preheat the oven to 350° F. Butter a small baking dish. Cut the sole fillets in half lengthwise. Place the fillets skin side up on a flat surface and sprinkle with salt and pepper. Sprinkle with half the basil, butter and lemon juice. Starting at the wider end, roll up the pieces of fish. Place the rolls seamside down in the baking dish. Drizzle with the remaining lemon juice and butter. Scatter the remaining basil and the nuts over the top. Bake the fish 15 to 20 minutes, or until it is just opaque when cut in the thickest part. Serve hot.
