Ingredients

1 Can(cn)  beef or chicken broth
1 Pound(lb)  chicken backs or wings
1   medium yellow onion, quartered but not peeled
2   medium carrots, halved lengthwise but not peeled
1   medium stalk celery, quartered
6   sprigs parsley
6   black peppercorns
1   whole bay leaf
1 Clove(clv)  garlic, crushed lightly but not peeled

Preparation

Place the broth, chicken wings or backs, onion, carrots, celery, parsley, peppercorns, bay leaf and garlic in a large saucepan. Bring to a boil, uncovered, over moderate heat. Adjust the heat so that the mixture bubbles gently and simmer, uncovered, for 30 minutes. Set a large fine sieve over a large heatproof bowl, pour in the broth mixture, then press the solids to extract all the liquid. Discard the solids and let the broth cool. Pour it into 3 sterilized 1 pint preserving jars, and chill for 2 to 3 hours or until the fat solidifies. Remove the fat and discard. Keeps in the refrigerator for 5 days, or in the freezer for 6 months.
