Butermilk adds a rich level of flavor to cornbread, that Southerns have long enjoyed with tangy barbecued foods.

1 1/2 Cup(c)  yellow or white cornmeal
1/2 Cup(c)  all purpose flour
1 1/2 Cup(c)  buttermilk
1/4 Cup(c)  vegetable oil
2 Teaspoon(t)  baking powder
1 Tablespoon(T)  sugar
1 Teaspoon(t)  salt
1/2 Teaspoon(t)  baking soda
2   large eggs


Heat oven to 450° F. Grease bottom and side of round pan, 9 by 1 1/2 inches, square pan, 8 by 8 by 2 inches, or 10 inch ovenproof skillet with vegetable oil. Mix all ingredients. Beat vigorously 30 seconds. Pour batter into pan. Bake round or square pan 25 to 30 minutes, skillet about 20 minutes, or until golden brown. Serve warm.
