Recipe Description
Using reduced fat ingredients makes this cornbread a bit lighter than many others. Yogurt gives the bread a rich and creamy flavor and boosts the calcium content.

1 Cup(c)  yellow cornmeal
1 Cup(c)  all purpose flour
1 Tablespoon(T)  low sodium baking powder
1/2 Teaspoon(t)  salt
1 Cup(c)  fat free milk
1/2 Cup(c)  fat free plain yogurt
1/2 Cup(c)  egg substitute

Preparation

Preheat oven to 400° F. Mix all ingredients together in a large bowl and stir by hand until moist. Pour into a 9 inch baking dish that has been coated with non stick cooking spray. Bake for 20 minutes.
