Southwestern Black Bean Pork Chops

Start these mildly spiced pork chops in your slow cooker in the morning, and you'll have a delicious dinner ready by the time you come home at night.

Ingredients

4   center cut pork chops, 1 inch thick
2 Teaspoon(t)  mexican seasoning
10 Ounce(oz)  condensed creamy chicken verde soup
10 Ounce(oz)  whole kernel corn
1/2 Cup(c)  frozen onion, chopped
15 Ounce(oz)  low sodium black beans, rinsed and drained
3/4 Cup(c)  salsa with cilantro
4   fresh cilantro sprigs (optional)

Preparation

Sprinkle chops with Mexican seasoning and set aside. In a 5 quart slow cooker, combine beans, corn and onion. Place chops on top of vegetables. In a medium bowl, stir together soup and salsa. Pour over chops. Cover and cook on low heat setting for 5 to 7 hours. Serve with cilantro (optional).
