Recipe Description
This simple recipe is full of vitamins C and A. Serve it with toasted whole wheat French bread and some red wine.

12   pesto rice meatballs
26 Ounce(oz)  pasta sauce
1   onion, chopped
1   large carrot, grated
12 Ounce(oz)  spaghetti
5 Tablespoon(T)  parmesan cheese, grated and divided

Preparation

Bring a large pot of water to a boil. Prepare the Pesto Rice Meatballs and brown in large pan for 5 minutes. Add pasta sauce, onion and carrot and bring to a simmer. Simmer over low heat, stirring frequently, for 10 to 15 minutes until vegetables are tender and meatballs are cooked. Cook spaghetti in water according to package directions, or until almost al dente. Drain spaghetti and add meatballs to simmering sauce along with 3 tablespoons of the cheese. Simmer, stirring gently, for 5 to 6 minutes, or until pasta is al dente. Sprinkle with the remaining 2 tablespoons Parmesan cheese and serve immediately.
