For a great introduction to the charm of chillies, this simple pasta dish is hard to beat. Children love the gentle heat of the sweet and spicy tomato sauce.

12 Ounce(oz)  ground beef
1   egg
4 Tablespoon(T)  fresh flat leaf parsley, roughly chopped
1/2 Teaspoon(t)  dried red chillies, crushed
1 Slice(sli)  thick white bread, crusts removed
2 Tablespoon(T)  milk
3 Tablespoon(T)  parmesan cheese
1 Pinch(pn)  salt, to taste
2 Tablespoon(T)  olive oil
1 2/3 Cup(c)  vegetable stock
1 1/4 Cup(c)  passata (bottled strained tomatoes)
1 Teaspoon(t)  sugar
12 Ounce(oz)  spaghetti, dried
1 Pinch(pn)  black pepper, ground, to taste


Put the beef in a bowl. Add the egg, with half the parsley and half the crushed chillies. Season with plenty of salt and pepper. Tear the bread into pieces and place in a bowl. Moisten with the milk. Leave to soak for a few minutes, then squeeze out the excess milk and crumble the bread over the meat mixture. Mix everything together with a wooden spoon, then use your hands to knead the mixture so that it becomes smooth and quite sticky. Wash your hands, rinse them under the cold tap, then pick up small pieces of the mixture and roll them to make about 20 to 30 small balls. Place on a tray and chill for 30 minutes. Heat the oil in a large non stick frying pan. Cook the meatballs in batches until browned on all sides. Meanwhile, pour the passata and stock into a pan. Heat gently, then add the remaining chillies, sugar and season. Add the meatballs and simmer for 20 minutes. Cook the pasta until it is just tender, following the instructions on the packet. Drain and tip it into a large heated bowl. Pour over the sauce and toss gently. Sprinkle with the remaining parsley and shavings of Parmesan cheese. Serve immediately.
