Recipe Description
A colorful combination side dish that boasts lima beans, corn and tomatoes.  Fresh and so simple to make!

Ingredients

1 Pinch(pn)  pepper, to taste
1/4 Teaspoon(t)  salt
1 Teaspoon(t)  margarine
1/4 Teaspoon(t)  marjoram, dried
1/2 Cup(c)  tomatoes, fresh or canned
1/2 Cup(c)  whole kernel corn, fresh or frozen
1/2   bay leaf
1 Tablespoon(T)  onion, chopped
1/2 Cup(c)  water
1 Cup(c)  lima beans, frozen

Preparation

Put the beans, water, onion, and bay leaf into a medium sized saucepan.  Cook for about 10 minutes over medium heat.  Add the corn, tomatoes, marjoram, margarine, salt and pepper.  Cook for about 15 minutes longer, or until lima beans are tender.  Drain and serve immediately.  Feel free to add purple onion for both color and flavor.

Additional notes

Variation:  You can subsititute extra virgin olive oil for margarine.
