This spicy burrito offers two advantages: they use leftover beef from a large meal and they taste so orginial, you'll never know you are eating leftovers. Try using chicken or turkey in this recipe for another variation.

1 Cup(c)  onion, diced
3 Clove(clv)  garlic, minced
4 Cup(c)  beef, finely diced
10 Ounce(oz)  chili sauce
1/2 Teaspoon(t)  cinnamon, ground
1/2 Teaspoon(t)  cumin
4 Tablespoon(T)  green chili, diced
3 Cup(c)  jack cheese, shredded
1 Cup(c)  sour cream
3   tomatoes, seeded and chopped
3 Tablespoon(T)  green chiles, diced
1 Cup(c)  green onion, chopped
1 Teaspoon(t)  cumin
1 Dash(ds)  salt, to taste
2 Tablespoon(T)  olive oil
24   flour tortillas (each about 8 inches in diameter)
29 Ounce(oz)  refried beans


To prepare tomato relish and guacamole: In a bowl, stir together 3 medium sized tomatoes, seeded and finely chopped, 1 cup thinly sliced green onions, 2 to 4 tablespoons canned diced green chiles and 1/2 teaspoon each ground coriander and salt. Cover and refrigerate until ready to serve. To prepare spicy meat filling: Heat 2 tablespoons olive oil or salad oil in a wide frying pan over medium heat. Add 1 large onion, finely chopped, and 3 cloves garlic, minced or pressed. Cook, stirring often, until onion is soft, about 5 minutes. Stir in 4 cups finely diced cooked beef. Stir in 10 ounces red chile sauce, 1/2 teaspoon each ground cinnamon and ground cumin, and 2 to 4 tablespoons canned diced green chiles. Season to taste with salt. Bring to a boil, then reduce heat and simmer, uncovered, for about 5 minutes. While filling is cooking, stack tortillas and wrap in foil. Heat in a 350 degree F oven until warm and soft, about 15 minutes. Meanwhile, heat beans in a large pan. Serve tortillas in a towel lined basket. Alongside, arrange tomato and chile relish, guacamole, spicy meat filling, beans, cheese and sour cream (if desired) in individual bowls. To assemble burritos, top tortillas with fillings and roll to enclose. Eat out of hand.
